Founded in 1815 by Charles Louis Noël Billaud, he planted vines on his family’s holdings situated near the river Serein. Known as one of the top producers in all of Chablis, Billaud-Simon’s 20 hectares include 4 of the 7 Grand Crus and 4 of the leading Premier Crus. They also happen to make their entry Chablis from estate fruit rooted in Kimmeridgian soils that surround their 1er and Grand Cru vineyards.

And is it this very wine that we are speaking of today.

Beautiful in both style and substance, a yellow, golden hue cascades in the glass, with subtle tinges of pale green piercing through when the light hits it just right. The nose is always alluring and inviting, leading with aromas of white peach, lemon oil, white flowers, chalk, and a subtle touch of brioche. The palate is well-balanced, delivering an array of ripe fruits backed by an electric tension that can only come from Chablis.

The winery has evolved tremendously over the years, and has moved into the 21st century with technology galore in the cellar to ensure every detail of the winemaking process is a focus.
